Appetizer before dinner

I made an appetizer before dinner.  I took rigatoni pasta and stuffed it with a cocktail “Lit’l Smokie”, then topped it with bacon, jack cheese and my home made sour cream sauce.

Wood Fired Chicken

Dinner is served. Wood fired chicken and BBQ potato skins with chicken/cheese. We ate at 7:00, it was late enough that I just grabbed some paper plates and we took our food right off the pan, no pretty plate.

Salmon

This is the prep work for our dinner tonight. I am making Honey orange nut crusted Salmon, on the BBQ. Marinaide 3/4 cup Soy Sauce 1/2 cup Honey 3 cups fresh OJ 1 Tbsp Barbecue seasoning by McCormic Grill Mates 1/2 cup of sugar 1 clove garlic, pressed Marinate for 4 hours  

Lobster Tails

I cooked the Lobster tails directly on the grill. The shrimp was marinated in Margarita mix prior to grilling. I then Sauteed the shrimp on the grill in a cast iron skillet with coconut oil , butter, fresh ground Chipotle seasoning, garlic and with a splash of fresh lime.

Shrimp Taco’s

Tonight I cooked Tequila Lime Chipotle shrimp for taco’s. We also had smoked Mac-n-Cheese. The shrimp was cooked over coals and Mesquite wood, open flame.

Who said that gluten free doesn’t taste good? This is my coconut crusted shrimp, with a peppercorn lime sauce.
